As for Scottish/UK companies, they will generally only want to hire fully experienced people as the culture here is to not train people. The entry-level market many decades ago was shit as well, it's not a new phenomenon.
If you were here it'd be easier, you could go to the meet-ups etc and hear about the various jobs going. Some are virtual, so do a bit of digging (no links to hand, sorry).
